Description

Ingredients

  • 1 cup almond flour
  • 1 cup all-purpose flour
  • 1 cup sugar
  • 1/2 cup unsalted butter, softened
  • 3 large eggs
  • 1 cup milk
  • 1 tablespoon baking powder
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon almond extract
  • 1 jar maraschino cherries
  • 1 cup butter, softened (for frosting)
  • 4 cups powdered sugar
  • 23 tablespoons milk (for frosting)
  • 1 teaspoon vanilla extract (for frosting)

Instructions

  1. Preheat the oven to 350°F (175°C). Grease and flour two 9-inch round cake pans.
  2. Cream together the softened butter and sugar until light and fluffy.
  3. Add the eggs one at a time, mixing well after each addition.
  4. Stir in the milk, vanilla extract, and almond extract.
  5. In another bowl, whisk together almond flour, all-purpose flour, and baking powder.
  6. Gradually add the dry ingredients to the wet mixture and combine until just blended.
  7. Divide the batter evenly between the prepared pans.
  8. Bake for 25-30 minutes, or until a toothpick inserted in the center comes out clean. Let cool in the pans for 10 minutes, then transfer to a wire rack to cool completely.
  9. For the frosting, beat the softened butter until smooth, then gradually add powdered sugar and milk until you reach the desired consistency.
  10. Mix in the vanilla extract and chopped maraschino cherries.
  11. Once the cake is completely cool, spread the cherry buttercream frosting between the layers and on top of the cake.
  12. Decorate with additional maraschino cherries if desired.

Notes

Make sure your butter is softened for easy mixing. Don’t overmix the batter; mix just until combined for a light and fluffy cake.
