Ingredients
1 sheet puff pastry, thawed
1 large Honeycrisp or Gala apple, thinly sliced
3 oz white cheddar cheese, grated
1 tbsp honey
1 egg, beaten (for egg wash)
Fresh thyme for garnish
Instructions
1. Preheat oven to 400°F (200°C) and line a baking sheet with parchment paper.
2. Roll puff pastry onto baking sheet, smoothing any creases.
3. Arrange apple slices in overlapping rows, leaving 1-inch border.
4. Sprinkle grated cheddar evenly over apples.
5. Drizzle with honey lightly over the top.
6. Brush pastry edges with egg wash.
7. Bake for 20–25 minutes until puffed and golden brown.
8. Cool slightly, garnish with thyme, slice, and serve.

Thaw puff pastry in the fridge overnight for crisp layers.
