Description

A tasty and healthy meal featuring salmon, crispy potatoes, and a zesty lemon sauce.


Ingredients

Scale
  • 4 salmon fillets
  • 2 cups baby potatoes, halved
  • 2 cups broccoli florets
  • 4 tablespoons olive oil
  • Salt and pepper to taste
  • 1 lemon, juiced
  • 2 garlic cloves, minced
  • 1 tablespoon fresh parsley, chopped

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Toss the halved baby potatoes with 2 tablespoons of olive oil, salt, and pepper.
  3. Spread the potatoes on a baking sheet and roast for 20 minutes.
  4. After 20 minutes, add broccoli florets to the baking sheet with the potatoes and push them to the side.
  5. Place the salmon fillets on the baking sheet and drizzle with the remaining olive oil, lemon juice, minced garlic, and season with salt and pepper.
  6. Roast everything for an additional 15 minutes, or until the salmon is cooked through and flaky.
  7. Remove from the oven, garnish with fresh parsley, and serve with lemon sauce drizzled on top.

Notes

Cut potatoes into even halves for even cooking. Consider marinating salmon for extra flavor.
