Description

Delightful muffins that combine ripe bananas with a rich crumb topping, perfect for breakfast, snacks, or dessert.


Ingredients

  • 2 ripe bananas, mashed
  • 3/4 cup brown sugar
  • 1/2 cup granulated sugar
  • 1/2 cup butter, melted
  • 2 eggs
  • 1 teaspoon vanilla extract
  • 1 1/2 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1/2 teaspoon cinnamon
  • 1/2 cup crumb topping

Instructions

  1. Preheat the oven to 350°F (175°C) and line a muffin tin with liners.
  2. In a large bowl, mix the mashed bananas with brown sugar, granulated sugar, and melted butter.
  3. Add the eggs and vanilla extract, mixing well until combined.
  4. In another bowl, whisk together the flour, baking soda, salt, and cinnamon.
  5. Gradually incorporate the dry ingredients into the banana mixture until just combined.
  6. Fill the muffin cups about 2/3 full with the batter.
  7. Top each muffin with crumb topping.
  8. Bake for 18-20 minutes, or until a toothpick comes out clean.
  9. Allow to cool before serving.
