Description

Banana Nut Muffins are a delightful treat that combines the sweetness of ripe bananas and the crunch of walnuts. Perfect for breakfast, snack, or dessert!


Ingredients

  • 1 cup all-purpose flour
  • 1/2 cup whole wheat flour
  • 1 1/2 teaspoons baking soda
  • 1/4 teaspoon salt
  • 1/8 teaspoon nutmeg
  • 1/8 teaspoon cinnamon
  • 1 stick salted butter (1/2 cup, melted)
  • 3 large ripe bananas (mashed)
  • 1/2 cup sugar
  • 1/4 cup dark brown sugar (packed)
  • 1/4 cup milk
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 3/4 cup – 1 cup walnuts (toasted if desired)

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a large mixing bowl, whisk together the all-purpose flour, whole wheat flour, baking soda, salt, nutmeg, and cinnamon. Set aside.
  3. Melt the butter and let it cool.
  4. In a separate bowl, mash the ripe bananas. Mix in the melted butter, both sugars, milk, egg, and vanilla extract until blended.
  5. Combine the wet ingredients with the dry ingredients. Stir until just mixed.
  6. Fold in half of the walnuts.
  7. Spoon the batter into 12 greased or lined muffin cups. Sprinkle the remaining walnuts on top.
  8. Bake for 22-26 minutes until golden brown and a toothpick comes out clean.
  9. Let cool on a wire rack for 5 minutes, then enjoy!
