This easy recipe brings the classic breakfast treat to life with simple ingredients and pro tips to nail it every time. Perfect for kids, adults, or anyone craving a warm, comforting snack!

Ingredients

Scale
H3: For the Dough
  • 2 cups all-purpose flour
  • 1 tablespoon granulated sugar
  • 1 teaspoon salt
  • 1 cup cold unsalted butter, cubed
  • 4 tablespoons ice water
H3: For the Filling
  • ¾ cup brown sugar (packed)
  • 1 teaspoon ground cinnamon
  • 1 tablespoon all-purpose flour
  • 1 tablespoon unsalted butter, melted
H3: For the Optional Glaze
  • ½ cup powdered sugar
  • ½ teaspoon ground cinnamon
  • 1 teaspoon milk

Instructions

  • Prepare the Dough
In a large bowl, whisk together flour, sugar, and salt. Cut in the cold butter with a pastry cutter or your fingers until it looks like coarse crumbs. Add ice water, 1 tablespoon at a time, mixing until the dough just comes together. Form it into a ball, wrap in plastic, and chill in the fridge for 30 minutes.
  • Make the Filling
In a small bowl, stir together brown sugar, cinnamon, flour, and melted butter until smooth. It should be thick and spreadable—perfect for stuffing your pop tarts!
  • Roll and Cut the Dough
On a floured surface, roll the chilled dough into a large rectangle about ⅛-inch thick. Cut it into 3×4-inch rectangles—you should get about 16 pieces (for 8 pop tarts).
  • Fill the Pop Tarts
Spoon 1 tablespoon of the brown sugar cinnamon filling onto the center of 8 dough rectangles. Spread it out, leaving a ½-inch border around the edges.
  • Assemble the Pop Tarts
Place the remaining 8 dough rectangles over the filled ones. Press the edges with a fork to seal them tight, then poke a few holes on top with the fork to let steam escape.
  • Bake to Perfection
Preheat your oven to 350°F (175°C). Place the pop tarts on a parchment-lined baking sheet and bake for 25 minutes, or until golden brown. Let them cool slightly on the sheet.
  • Add the Glaze (Optional)
Whisk together powdered sugar, cinnamon, and milk until smooth. Drizzle over the warm pop tarts for an extra sweet kick. Let it set for a few minutes before digging in.

Notes

  • Butter Temperature: Keep the butter cold for a flaky crust—pop it in the freezer for 10 minutes before using if it’s softened.
  • Filling Tip: If the filling feels too runny, add an extra teaspoon of flour to thicken it up and prevent leaks.
  • Storage: Store leftover pop tarts in an airtight container at room temperature for up to 3 days, or freeze for up to a month. Reheat in a toaster oven for best results.
  • Customization: Swap half the flour for whole wheat for a nuttier flavor, or add a pinch of nutmeg to the filling for a twist.
