- 1 cup cottage cheese
- 6 large eggs
- 1 cup shredded cheese (cheddar or your choice)
- 1/2 cup chopped vegetables (like bell peppers, spinach, or onions)
- Salt and pepper to taste
- Cooking spray or oil for greasing the muffin tin
Instructions
- Preheat your oven to 350°F (175°C) and grease a muffin tin with cooking spray or oil.
- Whisk together the cottage cheese and eggs until well combined.
- Stir in the shredded cheese and chopped vegetables. Season with salt and pepper.
- Pour the mixture evenly into the muffin tin cups, filling them about 3/4 full.
- Bake in the preheated oven for 20-25 minutes or until the egg bites are set and lightly golden on top.
- Allow to cool slightly before running a knife around the edges to remove them from the muffin tin. Serve warm or refrigerate for meal prep.
Notes
These egg bites can be refrigerated in an airtight container for up to 4 days or frozen for up to 2 months.
