Ingredients

  • 1 can black beans, drained and rinsed
  • 1 can corn, drained
  • 2 cups ready rice (such as microwaveable rice)
  • 1 cup shredded cheese (cheddar or Mexican blend)
  • 1 packet taco seasoning
  • Salt and pepper to taste
  • Chopped cilantro for garnish (optional)
  • Sour cream for serving (optional)

Instructions

  1. In a large skillet over medium heat, brown the ground beef until fully cooked. Drain any excess fat.
  2. Stir in the taco seasoning, black beans, corn, and ready rice. Mix until well combined.
  3. Cook for about 5-7 minutes, stirring occasionally until heated through.
  4. Sprinkle the shredded cheese over the mixture and cover the skillet until the cheese is melted, about 2-3 minutes.
  5. Season with salt and pepper to taste.
  6. Serve hot, garnished with chopped cilantro and sour cream if desired.
