- 1 lb Italian sausage
- 1/2 lb bacon
- 4 medium potatoes, diced
- 1 onion, chopped
- 3 cloves garlic, minced
- 4 cups chicken broth
- 2 cups heavy cream
- 1/2 tsp crushed red pepper flakes
- Salt and pepper to taste
- 2 cups kale, chopped
Instructions
- In a large pot, cook the Italian sausage and bacon over medium heat until browned. Remove the sausage and bacon, leaving the drippings in the pot.
- Add the onion and garlic to the pot and sauté until softened.
- Stir in the diced potatoes and chicken broth. Bring to a boil and cook until the potatoes are tender.
- Reduce heat and stir in the heavy cream, crushed red pepper, salt, and pepper.
- Add the cooked sausage, bacon, and chopped kale to the pot. Simmer for a few more minutes until heated through.
- Serve hot, preferably garnished with extra kale or cheese.
Notes
This soup pairs beautifully with crusty bread or a side salad. For extra flavor, consider adding grated Parmesan cheese on top.
