Description

A comforting and hearty Italian soup made with sausage, bacon, creamy broth, and potatoes, perfect for chilly nights.


Ingredients

Scale
  • 1 lb Italian sausage
  • 1/2 lb bacon
  • 4 medium potatoes, diced
  • 1 onion, chopped
  • 3 cloves garlic, minced
  • 4 cups chicken broth
  • 2 cups heavy cream
  • 1/2 tsp crushed red pepper flakes
  • Salt and pepper to taste
  • 2 cups kale, chopped

Instructions

  1. In a large pot, cook the Italian sausage and bacon over medium heat until browned. Remove the sausage and bacon, leaving the drippings in the pot.
  2. Add the onion and garlic to the pot and sauté until softened.
  3. Stir in the diced potatoes and chicken broth. Bring to a boil and cook until the potatoes are tender.
  4. Reduce heat and stir in the heavy cream, crushed red pepper, salt, and pepper.
  5. Add the cooked sausage, bacon, and chopped kale to the pot. Simmer for a few more minutes until heated through.
  6. Serve hot, preferably garnished with extra kale or cheese.

Notes

This soup pairs beautifully with crusty bread or a side salad. For extra flavor, consider adding grated Parmesan cheese on top.
