- 4 Salmon fillets
- 2 tablespoons Butter
- 2 cloves Garlic, minced
- 1 cup Cherry tomatoes, halved
- 3 cups Fresh spinach
- 1/2 cup Parmesan cheese, grated
- Fresh basil, for garnish
- Salt, to taste
- Pepper, to taste
- 1 cup Heavy cream
Instructions
- In a large skillet, melt butter over medium heat.
- Season salmon fillets with salt and pepper and add them to the skillet. Cook for about 5-6 minutes on each side until golden brown and cooked through.
- Remove salmon and set aside.
- In the same skillet, add minced garlic and sauté until fragrant.
- Add cherry tomatoes and cook until they start to soften.
- Stir in spinach and cook until wilted.
- Pour in heavy cream and stir in grated Parmesan cheese until smooth.
- Return the salmon to the skillet, spooning the creamy sauce over the fish.
- Garnish with fresh basil and serve immediately.
Notes
Serve hot with a side of rice or pasta, or with a fresh green salad. Add crusty bread to soak up the sauce.
