Instructions
- Cook the pasta according to package instructions.
- Soak the cashews in water for at least 30 minutes, then drain.
- In a blender, combine the soaked cashews, sun-dried tomatoes, garlic, nutritional yeast, lemon juice, salt, and pepper. Blend until smooth.
- In a pan over medium heat, add the blended sauce and heat until warm.
- Toss the cooked pasta with the creamy sauce until well coated.
