Ingredients

- 1 lb ground beef
- 1 cup shredded cheese
- 8 corn tortillas
- 1 packet taco seasoning
- 1 cup enchilada sauce
Instructions
- In a skillet, cook the ground beef over medium heat until browned. Be sure to drain any excess fat.
- Stir in the taco seasoning and 1/4 cup of water. Cook for about 5 minutes until the mixture thickens.
- Warm the corn tortillas in another pan.
- Fill each tortilla with the beef mixture and add shredded cheese on top.
- Pour enchilada sauce over the tacos.
- Serve hot and enjoy!
Notes
For extra flavor, add chopped onions or bell peppers while cooking the beef. Crisp up the tortillas by frying them briefly in hot oil before filling. Feel free to adjust the spice level by using mild or spicy taco seasoning.
