Description

A delicious and healthy casserole featuring sweet potatoes, eggs, and cheese, perfect for breakfast or brunch.


Ingredients

  • 2 medium sweet potatoes, peeled and diced
  • 6 large eggs
  • 1 cup milk
  • 1 cup shredded cheese (cheddar or your choice)
  • 1/2 onion, diced
  • 1 bell pepper, diced
  • Salt and pepper to taste
  • Olive oil for cooking

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. In a skillet, heat a little olive oil over medium heat and sauté the onion and bell pepper until softened.
  3. In a large mixing bowl, whisk together the eggs and milk.
  4. Add the cooked sweet potatoes, sautéed vegetables, and shredded cheese to the egg mixture. Season with salt and pepper.
  5. Pour the mixture into a greased baking dish.
  6. Bake in the preheated oven for 30-35 minutes, or until the casserole is set and lightly golden.
  7. Allow to cool slightly before slicing and serving.
