Description

Chewy, spiced fall baking cookies made with pumpkin, apple, maple, and cozy autumn spices.


Ingredients

Scale

1 cup unsalted butter, softened

1 cup brown sugar

1/2 cup granulated sugar

2 large eggs

1 tsp vanilla extract

2 1/2 cups all-purpose flour

1 tsp baking soda

1 tsp baking powder

1 tsp cinnamon

1/2 tsp nutmeg

1/2 tsp cloves

1 cup pumpkin puree or apple chunks

1/2 cup chopped pecans or walnuts

1/2 cup chocolate chips or caramel bits


Instructions

1. Cream butter and sugars until fluffy.

2. Beat in eggs, vanilla, and pumpkin puree.

3. Whisk dry ingredients in a separate bowl.

4. Combine wet and dry ingredients gently.

5. Fold in nuts, chocolate chips, or caramel.

6. Chill dough for 30 minutes if sticky.

7. Scoop dough onto lined baking sheet.

8. Bake at 350°F for 10–12 minutes until edges are golden.

9. Cool on baking sheet for 5 minutes before moving to rack.

Notes

Store in airtight container up to 3 days or refrigerate for 1 week.

Freeze dough balls for up to 3 months.

Use gel food coloring or icing for fall designs.
