Description

Creamy and refreshing frozen treats made with Greek yogurt and peanut butter, perfect for hot summer days.

Ingredients

Scale
  • 1 cup plain Greek yogurt (full-fat recommended for creamier texture)
  • 1/2 cup creamy peanut butter (unsweetened, natural preferred)
  • 2 tbsp maple syrup (or honey, adjust to taste)
  • 1/2 tsp vanilla extract (pure)
  • 1/4 cup mini chocolate chips (optional)
  • 1 tbsp chopped peanuts (for topping)
  • 1 tsp flaky sea salt (for topping)

Instructions

  1. Prepare the mixture: In a bowl, combine the Greek yogurt, peanut butter, maple syrup, and vanilla extract. Mix until smooth. If you like, fold in the mini chocolate chips for added sweetness and texture.
  2. Form and freeze: Scoop the mixture onto a parchment-lined baking sheet. Use a spoon or cookie scoop to make small rounds. Sprinkle chopped peanuts and flaky sea salt on top of each bite. Freeze for at least 120 minutes or until they are firm.
  3. Storage: Once frozen, transfer the bites to an airtight container and store them in the freezer. They can be kept for up to a month.

Notes

For a creamier texture, use full-fat Greek yogurt. Adjust the sweetness to your liking, and feel free to add mix-ins like crushed cookies or dried fruits.
