Description

Ingredients

  • 8 oz pasta (e.g., spaghetti or fettuccine)
  • 2 tablespoons olive oil
  • 4 cloves garlic, minced
  • 1 cup vegetable broth
  • 1/2 cup heavy cream or a plant-based alternative
  • 1/2 cup grated Parmesan cheese (or nutritional yeast for vegan)
  • Salt and pepper to taste
  • Chopped parsley for garnish

Instructions

  1. Cook the pasta according to package instructions in a large pot of salted water, then drain and set aside.
  2. In the same pot, heat olive oil over medium heat. Add minced garlic and sauté until fragrant, about 1 minute.
  3. Pour in vegetable broth and bring to a simmer. Stir in the heavy cream and Parmesan cheese, and season with salt and pepper.
