Ingredients

- 8 oz pasta (e.g., spaghetti or fettuccine)
- 2 tablespoons olive oil
- 4 cloves garlic, minced
- 1 cup vegetable broth
- 1/2 cup heavy cream or a plant-based alternative
- 1/2 cup grated Parmesan cheese (or nutritional yeast for vegan)
- Salt and pepper to taste
- Chopped parsley for garnish
Instructions
- Cook the pasta according to package instructions in a large pot of salted water, then drain and set aside.
- In the same pot, heat olive oil over medium heat. Add minced garlic and sauté until fragrant, about 1 minute.
- Pour in vegetable broth and bring to a simmer. Stir in the heavy cream and Parmesan cheese, and season with salt and pepper.
- Add the cooked pasta to the sauce and toss to coat evenly. Cook for an additional 2-3 minutes until heated through.
- Serve with chopped parsley on top and enjoy!
Notes
For a vegan option, replace heavy cream with a plant-based alternative and use nutritional yeast instead of Parmesan cheese.
