Description

Ingredients

  • 1 tsp psyllium husk or xanthan gum
  • ¼ tsp salt
  • ½ cup water or plant-based milk
  • 1 tbsp olive oil

Instructions

  • Prepare the Spinach

    • If using fresh spinach, blanch it in boiling water for 30 seconds, then drain and pat it dry.
    • Blend the spinach into a smooth puree using a food processor or blender.
  • Mix the Dry Ingredients

    • In a mixing bowl, combine the gluten-free flour, psyllium husk (or xanthan gum), and salt.
  • Combine Wet and Dry Ingredients

    • Add the spinach puree, water, and olive oil to the dry ingredients.
    • Mix thoroughly until a soft dough forms.
  • Knead and Rest the Dough

    • Knead the dough on a clean surface for a few minutes.
    • Cover and let it rest for 15-20 minutes.
  • Roll Out the Wraps

    • Divide the dough into equal portions and roll each one into a thin 6-8 inch circle.
  • Cook the Wraps

    • Heat a non-stick skillet over medium heat.
    • Cook each wrap for 1-2 minutes per side until lightly browned and flexible.
  • Cool and Store

    • Let the wraps cool completely before using.
    • Store in an airtight container in the refrigerator for up to a week or freeze for up to 2 months.
