Instructions
Prepare the Spinach
- If using fresh spinach, blanch it in boiling water for 30 seconds, then drain and pat it dry.
- Blend the spinach into a smooth puree using a food processor or blender.
Mix the Dry Ingredients
- In a mixing bowl, combine the gluten-free flour, psyllium husk (or xanthan gum), and salt.
Combine Wet and Dry Ingredients
- Add the spinach puree, water, and olive oil to the dry ingredients.
- Mix thoroughly until a soft dough forms.
Knead and Rest the Dough
- Knead the dough on a clean surface for a few minutes.
- Cover and let it rest for 15-20 minutes.
Roll Out the Wraps
- Divide the dough into equal portions and roll each one into a thin 6-8 inch circle.
Cook the Wraps
- Heat a non-stick skillet over medium heat.
- Cook each wrap for 1-2 minutes per side until lightly browned and flexible.
Cool and Store
- Let the wraps cool completely before using.
- Store in an airtight container in the refrigerator for up to a week or freeze for up to 2 months.
