Instructions
- Preheat the oven to 400°F (200°C).
- Slice the sweet potatoes into rounds about 1/2 inch thick.
- Toss the sweet potato rounds in olive oil and season with salt and pepper.

- Bake for about 20-25 minutes, flipping halfway through, until they are tender and lightly browned.
- Drizzle honey over the sweet potato rounds and sprinkle with crumbled feta cheese.
- Bake for an additional 5-7 minutes until the feta is slightly melted.
