Description

A delicious and easy Greek-inspired meal combining juicy chicken thighs with colorful mixed vegetables, flavored with fresh herbs and lemon, all cooked on one sheet pan.


Ingredients

  • 4 chicken thighs
  • 2 cups mixed vegetables (bell peppers, zucchini, red onion)
  • 1/4 cup olive oil
  • 2 cloves garlic, minced
  • 1 teaspoon dried oregano
  • 1 teaspoon dried thyme
  • Salt and pepper to taste
  • Juice of 1 lemon
  • Feta cheese for topping (optional)

Instructions

  1. Preheat the oven to 425°F (220°C).
  2. In a large bowl, mix the chicken thighs, mixed vegetables, olive oil, minced garlic, oregano, thyme, salt, pepper, and lemon juice. Toss everything together to coat well.
  3. Spread the mixture out on a large sheet pan in a single layer.
  4. Bake for 30-35 minutes, or until the chicken is cooked through and the vegetables are tender.
  5. If using, sprinkle feta cheese on top before serving.
  6. Serve warm.

Notes

Use bone-in chicken thighs for more flavor and juiciness. You can also change the vegetables based on your preference.
