Description

Nutritious and easy-to-make energy cookies packed with healthy fats, fiber, and protein.


Ingredients

Scale
  • 1 cup mixed nuts (almonds, walnuts, cashews)
  • 1/2 cup seeds (pumpkin seeds, sunflower seeds)
  • 1 cup rolled oats
  • 1/2 cup nut butter (peanut or almond butter)
  • 1/4 cup honey or maple syrup
  • 1/2 teaspoon vanilla extract
  • 1/2 teaspoon cinnamon
  • Pinch of salt

Instructions

  1. Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. In a large bowl, mix together the nuts, seeds, oats, cinnamon, and salt.
  3. Combine the nut butter, honey (or maple syrup), and vanilla extract in a separate bowl until smooth.
  4. Pour the wet ingredients into the dry mixture and stir until well combined.
  5. Using your hands, form small balls or patties of the mixture and place them on the prepared baking sheet.
  6. Bake for 10-12 minutes until golden, then let cool on a wire rack.

Notes

Store in an airtight container at room temperature for up to a week. Freeze for longer storage.
