- 1 cup cashews
- 1 can butter beans, drained and rinsed

- 2 cups vegetable broth

Instructions
- Cook the lentil pasta according to the package instructions. Drain and set aside.
- In a blender, combine the cashews with the vegetable broth and blend until smooth.
- In a pan, heat the olive oil over medium heat, then add the minced garlic and sauté until fragrant.
- Add the butter beans and fresh greens to the pan, cooking until the greens are wilted.
- Pour in the cashew sauce and stir well to combine.
- Add the cooked lentil pasta to the pan, mixing everything together.
- Season with salt and pepper to taste.
- Serve immediately.
Notes
For an even creamier sauce, soak the cashews for a few hours before blending. Customize with different beans or greens for added nutrition.
