Description

This jalapeno peach chicken is a sweet and spicy dinner you can make in 30 minutes. Juicy, bold, and easy to prep any night of the week.


Ingredients

Scale

1.5 lbs boneless, skinless chicken thighs or breasts

2 ripe peaches or 1/2 cup peach preserves

23 jalapeños, thinly sliced

2 cloves garlic, minced

2 tbsp soy sauce

1 tbsp olive oil

1 tbsp honey

Juice of 1 lime

Salt and black pepper, to taste


Instructions

1. Season chicken with salt and pepper.

2. In a bowl, mix peaches (or preserves), jalapeños, garlic, soy sauce, honey, and lime juice.

3. Marinate chicken in half the glaze for at least 20 minutes.

4. Cook chicken in a skillet, oven, or on the grill until almost done.

5. Add remaining glaze and cook until thick and sticky.

6. Let rest, then serve hot with your favorite sides.

Notes

Swap peaches with mango or apricot jam for variation.

Reduce jalapeño seeds for milder spice.

Leftovers are great in wraps, bowls, or tacos.
