Description

Ingredients

  • 1 cup ricotta cheese
  • 1 lemon (zested and juiced)
  • 2 cups fresh spinach
  • 2 tbsp olive oil
  • Salt and pepper to taste
  • Grated Parmesan cheese (for serving)

Instructions

  1. Cook the pasta according to package instructions. Drain and reserve some pasta water.
  2. In a large bowl, combine ricotta cheese, lemon zest, lemon juice, olive oil, salt, and pepper.
  3. Add the cooked pasta and spinach to the ricotta mixture, tossing to coat.
  4. If the pasta is too dry, add a little reserved pasta water to loosen it up.
  5. Serve hot, topped with grated Parmesan cheese.

Notes

For a protein boost, add grilled chicken or shrimp. You can also substitute spinach with arugula or kale. Use fresh lemon juice for the best flavor.
