- 2 salmon fillets
- 1 cup orzo pasta
- 2 cups vegetable broth
- 1 lemon (zested and juiced)
- 2 tablespoons olive oil
- 1 garlic clove (minced)
- Salt and pepper to taste
- Fresh parsley for garnish
Instructions
- Heat olive oil in a skillet over medium heat.
- Season salmon fillets with salt and pepper.
- Place salmon skin side down in the skillet, cooking for about 4-5 minutes, then flip and cook for another 3-4 minutes until done.
- Remove salmon and set aside.
- Add minced garlic to the skillet and sauté for about a minute.
- Add orzo and toast for a minute.
- Pour in vegetable broth, lemon juice, and zest. Bring to a boil.
- Reduce heat and simmer orzo until cooked, about 8-10 minutes.
- Fluff orzo with a fork and serve topped with seared salmon and garnished with fresh parsley.
Notes
Use fresh salmon for the best flavor. Adjust lemon juice according to taste, and consider adding seasonal veggies for extra nutrition.
