- 2 chicken breasts
- 1 cup ricotta cheese
- 8 oz pasta (your choice)
- 2 tablespoons olive oil
- 2 cloves garlic, minced
- Salt and pepper to taste
- Fresh basil for garnish (optional)
Instructions
- Cook the pasta according to package instructions; drain and set aside.
- While the pasta cooks, heat olive oil in a large skillet over medium heat. Add minced garlic and sauté until fragrant.
- Add the chicken breasts to the skillet, seasoning with salt and pepper. Cook until the chicken is cooked through, about 6-7 minutes per side. Remove from skillet and slice into strips.
- In the same skillet, add the cooked pasta and ricotta cheese. Stir until well combined and heated through.
- Serve the pasta topped with the sliced chicken and garnish with fresh basil if desired.
Notes
For extra flavor, add grated Parmesan cheese to the ricotta mixture. Include vegetables like spinach or cherry tomatoes for added nutrition.
