Description

Ingredients

  • 1 15.25 oz. box red velvet cake mix
  • 1/3 cup vegetable oil
  • 2 eggs
  • 1 teaspoon baking powder
  • 1/2 cup powdered sugar (for coating)

Instructions

  1. In a large mixing bowl, add the cake mix, vegetable oil, eggs, and baking powder. Use an electric hand mixer to mix the ingredients until well combined and smooth.
  2. Cover the dough with plastic wrap and refrigerate for 15-20 minutes.
  3. Preheat your oven to 350°F (175°C) and prepare a cookie sheet with a silicone mat or parchment paper.
  4. Take about 3 tablespoons of dough and roll it into a ball. Roll the ball in the powdered sugar and knock off any excess sugar.
  5. Place the cookies about 2-3 inches apart on the baking sheet.
  6. Bake for 10-12 minutes or until the cookies are slightly browned and set on the sides.
  7. Let the cookies cool on the baking sheet for 5 minutes, then remove them to a wire rack to cool completely.
  8. Store in an airtight container for up to 5 days.
