- 1 15.25 oz. box red velvet cake mix
- 1/3 cup vegetable oil
- 2 eggs
- 1 teaspoon baking powder
- 1/2 cup powdered sugar (for coating)
Instructions
- In a large mixing bowl, add the cake mix, vegetable oil, eggs, and baking powder. Use an electric hand mixer to mix the ingredients until well combined and smooth.
- Cover the dough with plastic wrap and refrigerate for 15-20 minutes.
- Preheat your oven to 350°F (175°C) and prepare a cookie sheet with a silicone mat or parchment paper.
- Take about 3 tablespoons of dough and roll it into a ball. Roll the ball in the powdered sugar and knock off any excess sugar.
- Place the cookies about 2-3 inches apart on the baking sheet.
- Bake for 10-12 minutes or until the cookies are slightly browned and set on the sides.
- Let the cookies cool on the baking sheet for 5 minutes, then remove them to a wire rack to cool completely.
- Store in an airtight container for up to 5 days.
Notes
Ensure dough is chilled before forming into balls to prevent spreading. Don’t overbake; cookies should be soft in the center.
