This Rice Noodle Recipe is quick, easy, and versatile. Chewy rice noodles tossed with vegetables, savory sauce, and optional protein make it a family-friendly dinner ready in under 30 minutes.
Ingredients
8 oz rice noodles
2 tbsp soy sauce
1 tbsp sesame oil
2 cloves garlic, minced
1 tsp fresh ginger, grated
1 cup mushrooms, sliced
1 carrot, julienned
1 cup bok choy or spinach
1 chicken breast or tofu (optional)
2 scallions, chopped
Instructions
1. Soak or boil rice noodles according to package directions, then drain and rinse with cold water.
2. Heat sesame oil in a large pan or wok. Sauté garlic, ginger, mushrooms, and carrots until fragrant.
3. Add chicken or tofu (if using) and cook until done.
4. Stir in soy sauce and bok choy or spinach, cooking until just wilted.
5. Toss noodles with the sauce and vegetables, then serve hot topped with scallions.
Notes
Keep noodles and sauce separate if storing for meal prep.
Refresh leftovers by dipping noodles in boiling water for 30 seconds.
