Description
These Slow Cooker Queso Chicken Tacos are creamy, flavorful, and incredibly easy to make. With just a few ingredients and almost no prep, they’re the perfect stress-free family dinner.
Ingredients
1.5–2 lbs boneless skinless chicken breasts
1 jar queso (about 15 oz)
1 packet taco seasoning
1 can Rotel (optional)
1/2 cup chicken broth (optional)
Soft tortillas for serving
Your choice of toppings: avocado, cilantro, sour cream, lime
Instructions
1. Spray the slow cooker with nonstick spray.
2. Add chicken breasts to the bottom.
3. Sprinkle taco seasoning evenly over chicken.
4. Pour queso over the top. Add Rotel and broth if using.
5. Cover and cook on LOW for 6 hours or HIGH for 3–4 hours.
6. Shred chicken directly in the slow cooker.
7. Stir until fully coated with queso.
8. Serve warm in tortillas with your favorite toppings.
Notes
For a spicier version, use hot queso or add diced jalapeños.
Leftovers taste even better the next day and freeze well.
You can substitute with plant-based queso for a dairy-free option.
