Delicious bites made from leftover sourdough discard, perfect for breakfast or a snack.
Ingredients

- 1 cup sourdough discard (unfed, 100% hydration)
- 2 cups all-purpose flour, plus more for dusting
- 2 tablespoons sugar
- 1 teaspoon salt
- 1 teaspoon baking powder
- 1/4 cup melted butter or coconut oil
- 1/3 cup warm milk (dairy or plant-based)
- 1/4 cup softened butter (for the filling)
- 1/2 cup brown sugar (for the filling)
- 1 tablespoon ground cinnamon (for the filling)
- 1/2 teaspoon vanilla extract (for the filling)
- 4 ounces cream cheese, softened (for the glaze)
- 1/2 cup powdered sugar (for the glaze)
- 1 tablespoon milk (for the glaze)
- 1/2 teaspoon vanilla extract (for the glaze)
Instructions
- In a bowl, mix the sourdough discard, flour, sugar, salt, baking powder, melted butter, and warm milk until it forms a dough.
- Knead the dough lightly for 2-3 minutes.
- Let the dough rest for 30 minutes.
- Roll the dough out into a rectangle shape.
- Spread softened butter on top of the dough, then sprinkle with brown sugar, cinnamon, and vanilla extract.
- Roll the dough tightly and slice it into 1-inch pieces.
- Preheat your oven to 375°F and bake for 18-20 minutes or air fry at 350°F for 10-12 minutes until golden.
- While the rolls are baking, whisk together the glaze ingredients.
- Drizzle the glaze over warm bites before serving.
Notes
These bites are best served warm. You can add chocolate chips, nuts, or dried fruit for a unique twist.
