Description

Delicious bites made from leftover sourdough discard, perfect for breakfast or a snack.


Ingredients

  • 1 cup sourdough discard (unfed, 100% hydration)
  • 2 cups all-purpose flour, plus more for dusting
  • 2 tablespoons sugar
  • 1 teaspoon salt
  • 1 teaspoon baking powder
  • 1/4 cup melted butter or coconut oil
  • 1/3 cup warm milk (dairy or plant-based)
  • 1/4 cup softened butter (for the filling)
  • 1/2 cup brown sugar (for the filling)
  • 1 tablespoon ground cinnamon (for the filling)
  • 1/2 teaspoon vanilla extract (for the filling)
  • 4 ounces cream cheese, softened (for the glaze)
  • 1/2 cup powdered sugar (for the glaze)
  • 1 tablespoon milk (for the glaze)
  • 1/2 teaspoon vanilla extract (for the glaze)

Instructions

  1. In a bowl, mix the sourdough discard, flour, sugar, salt, baking powder, melted butter, and warm milk until it forms a dough.
  2. Knead the dough lightly for 2-3 minutes.
  3. Let the dough rest for 30 minutes.
  4. Roll the dough out into a rectangle shape.
  5. Spread softened butter on top of the dough, then sprinkle with brown sugar, cinnamon, and vanilla extract.
  6. Roll the dough tightly and slice it into 1-inch pieces.
  7. Preheat your oven to 375°F and bake for 18-20 minutes or air fry at 350°F for 10-12 minutes until golden.
  8. While the rolls are baking, whisk together the glaze ingredients.
  9. Drizzle the glaze over warm bites before serving.

Notes

These bites are best served warm. You can add chocolate chips, nuts, or dried fruit for a unique twist.
