Ingredients

- 1 pound sweet potatoes
- 1 cup all-purpose flour (add more if needed)
- ½ teaspoon salt
Instructions
- Prick the sweet potatoes with a fork and microwave for 7 to 10 minutes until they are tender.
- Cut the sweet potatoes in half, scoop out the flesh into a bowl, and mash until smooth.
- Mix in the flour and salt with a spoon, then use your hands to combine everything.
- Transfer the mixture to a floured worktop and knead for about a minute until a soft dough forms.
- Cut the dough into 4 pieces, roll each piece into ropes, and cut into small pillows.
- Cook the gnocchi in salted boiling water for 1 to 2 minutes until they float to the top.
- Remove the gnocchi and serve with your favorite sauce, such as marinara topped with parmesan and pistachios.
Notes
Adjust the flour as needed; some sweet potatoes are wetter than others. You can add herbs or ricotta to customize.
