Description

Delicious homemade Sweet Potato Gnocchi, a healthier alternative to traditional pasta, perfect for any occasion.


Ingredients

Scale
  • 1 pound sweet potatoes
  • 1 cup all-purpose flour (add more if needed)
  • ½ teaspoon salt

Instructions

  1. Prick the sweet potatoes with a fork and microwave for 7 to 10 minutes until they are tender.
  2. Cut the sweet potatoes in half, scoop out the flesh into a bowl, and mash until smooth.
  3. Mix in the flour and salt with a spoon, then use your hands to combine everything.
  4. Transfer the mixture to a floured worktop and knead for about a minute until a soft dough forms.
  5. Cut the dough into 4 pieces, roll each piece into ropes, and cut into small pillows.
  6. Cook the gnocchi in salted boiling water for 1 to 2 minutes until they float to the top.
  7. Remove the gnocchi and serve with your favorite sauce, such as marinara topped with parmesan and pistachios.

Notes

Adjust the flour as needed; some sweet potatoes are wetter than others. You can add herbs or ricotta to customize.
