Ingredients
2 cups all-purpose flour
3/4 cup water
1 tsp salt
4 cups dashi broth
2 tbsp soy sauce
1 tbsp mirin
1 cup mushrooms
1 bunch bok choy
2 scallions, chopped
1 egg, soft boiled (optional)
Instructions
1. Mix flour, water, and salt into a dough.
2. Knead until smooth, then rest for 30 minutes.
3. Roll and cut into thick Udon noodles.
4. Boil noodles until chewy, then rinse.
5. Prepare broth with dashi, soy sauce, and mirin.
6. Add mushrooms and bok choy to broth.
7. Drop noodles into hot broth before serving.
8. Top with scallions and soft-boiled egg.
Notes
Store noodles separate from broth to keep them chewy.
