This Walking Taco Casserole recipe is a cheesy, crunchy twist on classic walking tacos. Perfect for weeknight dinners, potlucks, or game day!

1 lb ground beef 1 packet taco seasoning 1/2 onion, diced 2 garlic cloves, minced 1 can black beans, drained 1 cup corn (canned or frozen) 1 can Rotel tomatoes or salsa 2 cups shredded cheddar or Mexican blend cheese 2 cups crushed Fritos or Doritos Optional toppings: sour cream, jalapeños, lettuce, avocado


Instructions

1. Preheat oven to 350°F (175°C). 2. Cook ground beef with onion and garlic until browned. 3. Stir in taco seasoning, black beans, corn, and Rotel. 4. Spread mixture into a greased 9×13 baking dish. 5. Top with shredded cheese. 6. Bake 15–20 minutes until hot and bubbly. 7. Sprinkle crushed chips over casserole before serving. 8. Add toppings like sour cream, lettuce, or avocado.

Notes

Store leftovers in fridge up to 3 days. Freeze beef mixture separately without chips for up to 2 months. Reheat in oven to keep chips crisp. Swap beef for ground turkey or chicken for a lighter version.
