For the Cake

  • 1 ¾ cups all-purpose flour (or gluten-free alternative)
  • 1 cup granulated sugar
  • ½ cup unsalted butter (softened)
  • 1 cup almond milk (or regular milk)
  • 1 ½ tsp baking powder
  • ½ tsp baking soda
  • ½ tsp salt
  • 1 tsp vanilla extract
  • 1 tsp almond extract
  • ¾ cup finely ground almonds (or almond flour)
  • ½ cup chopped or sliced almonds (for topping)

For the Optional Frosting

  • 1 cup cream cheese (softened)
  • ½ cup unsalted butter (softened)
  • 3 cups powdered sugar
  • 1 tsp vanilla extract
  • ½ tsp almond extract

Instructions

  • Preheat & Prepare the Pan

    • Preheat oven to 350°F (175°C).
    • Grease a 9-inch round or square cake pan and line with parchment paper.
  • Mix the Dry Ingredients

    • In a medium bowl, whisk together flour, baking powder, baking soda, salt, and ground almonds.
  • Cream Butter & Sugar

    • In a large bowl, beat butter and sugar until light and fluffy.
    • Mix in vanilla and almond extracts.
  • Incorporate Wet & Dry Ingredients

    • Add eggs one at a time, mixing well.
    • Gradually mix in dry ingredients, alternating with almond milk.
    • Stir until smooth, but do not overmix.
  • Bake the Cake

    • Pour batter into the prepared pan.
    • Sprinkle with sliced almonds.
    • Bake for 30–35 minutes, or until a toothpick inserted in the center comes out clean.
  • Cool & Frost (Optional)

    • Let the cake cool in the pan for 10 minutes, then transfer to a wire rack.
    • If using frosting, beat together cream cheese, butter, powdered sugar, vanilla, and almond extract until fluffy.
    • Spread frosting over the cooled cake and top with more almonds.
