Description

A comforting and flavorful Cajun Chicken & Rice dish that combines bold spices and creamy goodness, perfect for busy weeknights.


Ingredients

Scale
  • 1 pound chicken breast or thighs
  • 2 tablespoons Cajun seasoning
  • 1 tablespoon oil
  • 1 tablespoon lemon juice (optional)
  • 1 cup long-grain white rice
  • 2 cups chicken stock
  • 3 cloves garlic (minced)
  • 1 medium onion (chopped)
  • 1 medium bell pepper (chopped)
  • 2 stalks celery (chopped)
  • 4 ounces light cream cheese
  • 1/4 cup Parmesan cheese (grated)

Instructions

  1. Marinate the chicken in lemon juice and Cajun seasoning for 30 minutes (optional).
  2. Chop the onion, garlic, bell pepper, and celery.
  3. Heat oil in a large skillet over medium-high heat.
  4. Add the chicken and sear until browned on both sides, about 5-7 minutes; remove and set aside.
  5. In the same skillet, add onion, garlic, bell pepper, and celery; sauté for 3-4 minutes until soft.
  6. Add the rice and chicken stock; stir well and bring to a boil.
  7. Reduce heat, cover, and let simmer for 15 minutes.
  8. Stir in cream cheese and Parmesan cheese until melted into a creamy sauce.
  9. Add the chicken back into the skillet, cover, and cook for an additional 5 minutes to heat through.

Notes

Garnish with chopped parsley or extra Parmesan cheese. Pairs well with a side salad or crusty bread.
