- 1 pound chicken breast or thighs
- 2 tablespoons Cajun seasoning
- 1 tablespoon oil
- 1 tablespoon lemon juice (optional)
- 1 cup long-grain white rice
- 2 cups chicken stock
- 3 cloves garlic (minced)
- 1 medium onion (chopped)
- 1 medium bell pepper (chopped)
- 2 stalks celery (chopped)
- 4 ounces light cream cheese
- 1/4 cup Parmesan cheese (grated)
Instructions
- Marinate the chicken in lemon juice and Cajun seasoning for 30 minutes (optional).
- Chop the onion, garlic, bell pepper, and celery.
- Heat oil in a large skillet over medium-high heat.
- Add the chicken and sear until browned on both sides, about 5-7 minutes; remove and set aside.
- In the same skillet, add onion, garlic, bell pepper, and celery; sauté for 3-4 minutes until soft.
- Add the rice and chicken stock; stir well and bring to a boil.
- Reduce heat, cover, and let simmer for 15 minutes.
- Stir in cream cheese and Parmesan cheese until melted into a creamy sauce.
- Add the chicken back into the skillet, cover, and cook for an additional 5 minutes to heat through.
Notes
Garnish with chopped parsley or extra Parmesan cheese. Pairs well with a side salad or crusty bread.
