Description

Delicious and nutritious energy balls that capture the flavors of carrot cake without the need for baking.


Ingredients

Scale
  • 1 cup medjool dates (pits removed; if dry, soak in warm water for 10 minutes)
  • 1/3 cup shredded carrots (fresh or frozen)
  • 1 cup walnuts (can substitute with almonds or pecans)
  • 1 tbsp chia seeds (for added nutritional value)
  • 1/3 cup shredded unsweetened coconut (extra for rolling)
  • 1/2 tsp cinnamon
  • 1/4 tsp nutmeg
  • A pinch of salt
  • 1 tsp vanilla extract
  • 1/2 cup shredded coconut for rolling (for coating the balls)

Instructions

  1. Add the medjool dates to a food processor and process until finely chopped.
  2. Combine the shredded carrots, walnuts, chia seeds, coconut, cinnamon, nutmeg, salt, and vanilla extract in the processor. Pulse until sticky.
  3. Scoop out small portions of the mixture and roll them into balls, about one inch in size.
  4. Roll the balls in shredded coconut to coat them and place on a plate or tray.
  5. Chill in the refrigerator for about 30 minutes to firm them up.

Notes

For a sweeter snack, consider adding honey or maple syrup. You can switch up the nuts or add dried fruit for variety.
