Instructions
- Sauté the onions and garlic: In a large pot, heat olive oil over medium heat. Add diced onions and minced garlic, sautéing until translucent (about 3-4 minutes).
- Cook the mushrooms: Add the sliced mushrooms to the pot. Cook for about 5-7 minutes until they soften and release their moisture.
- Add broth and seasoning: Pour in the vegetable broth, followed by dried thyme, salt, and pepper. Bring the mixture to a boil.
- Simmer: Reduce the heat and let the soup simmer for about 10 minutes so that the flavors meld together.
- Blend with cottage cheese: Stir in the cottage cheese, mixing well. Use an immersion blender to blend to your desired creaminess.
- Reheat: Warm the soup again over low heat, making sure it’s hot but not boiling.
- Serve: Ladle the soup into bowls and garnish with fresh parsley for a pop of color.
