- 1 cup Cottage Cheese (Low-fat recommended)
- 1 cup Fresh Raspberries (Can substitute with frozen)
- 2 tbsp Honey or Maple Syrup (Adjust to taste)
- 1 tsp Vanilla Extract (Optional)
- 1 cup Fresh Raspberries (For topping)
- A few leaves Mint Leaves (For garnish)
Instructions
- In a blender or food processor, combine the cottage cheese, fresh raspberries, honey or maple syrup, and vanilla extract (if using).
- Blend until the mixture is smooth and creamy.
- Taste and adjust the sweetness by adding more honey or maple syrup if needed.
- Pour the mousse into serving bowls or glasses.
- Chill in the refrigerator for at least 30 minutes.
- Before serving, top with additional fresh raspberries and mint leaves for garnish.
Notes
For a silkier texture, blend the cottage cheese until completely smooth before adding other ingredients. Feel free to use frozen raspberries if fresh ones aren’t available; just ensure to thaw and drain them before blending.
