Description

A healthier twist on a classic dessert, this creamy cottage cheese raspberry mousse is light, fluffy, and packed with protein.


Ingredients

  • 1 cup Cottage Cheese (Low-fat recommended)
  • 1 cup Fresh Raspberries (Can substitute with frozen)
  • 2 tbsp Honey or Maple Syrup (Adjust to taste)
  • 1 tsp Vanilla Extract (Optional)
  • 1 cup Fresh Raspberries (For topping)
  • A few leaves Mint Leaves (For garnish)

Instructions

  1. In a blender or food processor, combine the cottage cheese, fresh raspberries, honey or maple syrup, and vanilla extract (if using).
  2. Blend until the mixture is smooth and creamy.
  3. Taste and adjust the sweetness by adding more honey or maple syrup if needed.
  4. Pour the mousse into serving bowls or glasses.
  5. Chill in the refrigerator for at least 30 minutes.
  6. Before serving, top with additional fresh raspberries and mint leaves for garnish.

Notes

For a silkier texture, blend the cottage cheese until completely smooth before adding other ingredients. Feel free to use frozen raspberries if fresh ones aren’t available; just ensure to thaw and drain them before blending.
