Ingredients

- 2 cups cooked chicken, shredded
- 1 cup rice (white or brown)
- 4 cups chicken broth
- 2 carrots, diced
- 2 celery stalks, diced
- 1 onion, chopped
- 1 teaspoon garlic, minced
- 1 teaspoon dried thyme
- Salt and pepper to taste
- Fresh herbs for garnish (optional)
Instructions
- In a crockpot, combine the cooked chicken, rice, chicken broth, carrots, celery, onion, garlic, and thyme.
- Season with salt and pepper to taste.
- Cook on low for 6-8 hours or on high for 3-4 hours, until the rice is tender.
- If desired, garnish with fresh herbs before serving.

This soup can be stored in an airtight container for up to 3-4 days in the refrigerator or frozen for up to 3 months.
