- 1 lb chicken breasts
- 1 can black beans, drained and rinsed
- 1 can corn, drained
- 1 cup salsa
- 1 tsp cumin
- 1 tsp chili powder
- Salt and pepper to taste
- Cooked rice or quinoa for serving
- Toppings: shredded cheese, diced avocado, sour cream, cilantro
Instructions
- Place chicken breasts in the crockpot.
- Add black beans, corn, salsa, cumin, chili powder, salt, and pepper.
- Mix everything together gently.
- Cover and cook on low for 6-8 hours or high for 3-4 hours, until chicken is cooked through.
- Shred the chicken using two forks and stir to combine everything.
- Serve over cooked rice or quinoa and customize with your favorite toppings.
Notes
For extra flavor, marinate the chicken in salsa for a couple of hours before cooking. Adjust spices to your liking.
