- Cottage Cheese
- Blueberries
- Sweetener (maple syrup, honey, or agave nectar)
- Lemon Juice
- Lemon Zest
- Vanilla Extract
- Gelatin (optional)
- Chia Seeds (optional)

- Whipped Heavy Cream (optional)
Instructions
- Prepare your blueberries: In a small saucepan, combine about two-thirds of the blueberries, a tablespoon of sweetener, and a squeeze of lemon juice. Simmer gently over medium-low heat for about 5-7 minutes until the blueberries burst and the mixture thickens slightly. Let it cool completely.
- Process the cottage cheese: Transfer all of the cottage cheese to a food processor or high-speed blender. Process on high for several minutes until it is smooth and free of lumps.
- Combine the flavors: Add the cooled blueberry compote (or mashed fresh blueberries), remaining sweetener, vanilla extract, and lemon zest to the food processor. Process until beautifully combined and the mousse has a uniform pale purple hue.
- Incorporate thickener (if using): If you are using gelatin, bloom it in cold water, warm it until dissolved, and stream it into the mousse mixture while blending. If you prefer chia seeds, stir them into the mixture by hand and let sit for 5-10 minutes.
- Portion and chill: Spoon or pour the mousse into serving glasses or bowls. Cover loosely with plastic wrap and refrigerate for at least 120-240 minutes, but preferably overnight.
- Garnish and serve: Before serving, add a scattering of fresh blueberries, a sprig of mint, or a sprinkle of lemon zest on top.
Notes
For a smoother texture, ensure your cottage cheese is blended well with no lumps. Adjust sweetness to taste.
