Ingredients

- 1 cup peanut butter
- 1/2 cup honey or maple syrup
- 1 cup gluten-free oats
- 1/2 cup dark chocolate chips
- 1/4 cup cocoa powder
- 1 teaspoon vanilla extract
- Pinch of salt
Instructions
- In a large bowl, mix together peanut butter and honey until well combined.
- Stir in the gluten-free oats, cocoa powder, dark chocolate chips, vanilla extract, and salt until all ingredients are evenly mixed.
- Roll the mixture into small balls, about 1 inch in diameter.
- Place the energy balls on a baking sheet lined with parchment paper.
- Refrigerate for at least 30 minutes to firm up.
- Store in an airtight container in the refrigerator.
Notes
These energy balls can also be frozen for up to three months. Let them thaw in the fridge before enjoying.
