- 4 cups vegetable broth
- 1 can diced tomatoes (14.5 oz)
- 1 teaspoon dried thyme
- 1 teaspoon dried basil
- Salt and pepper to taste
- 2 cups leafy greens (spinach or kale)
- Optional: fresh herbs for garnish
Instructions
- Heat olive oil in a large pot over medium heat.
- Add onion and garlic; sauté until softened.
- Stir in carrots, celery, and bell pepper, cooking until vegetables are tender.
- Pour in vegetable broth and add diced tomatoes, thyme, basil, salt, and pepper.
- Bring the soup to a boil, then reduce heat and simmer for 20-30 minutes.
- Add leafy greens and cook until wilted.
- Serve hot, garnished with fresh herbs if desired.
