A healthy and comforting vegetable soup packed with nutritious ingredients, perfect for a quick meal or using up leftovers.


Ingredients

  • 1 tablespoon olive oil
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 3 carrots, diced
  • 2 stalks celery, diced
  • 1 bell pepper, chopped
  • 4 cups vegetable broth
  • 1 can diced tomatoes (14.5 oz)
  • 1 teaspoon dried thyme
  • 1 teaspoon dried basil
  • Salt and pepper to taste
  • 2 cups leafy greens (spinach or kale)
  • Optional: fresh herbs for garnish

Instructions

  1. Heat olive oil in a large pot over medium heat.
  2. Add onion and garlic; sauté until softened.
  3. Stir in carrots, celery, and bell pepper, cooking until vegetables are tender.
  4. Pour in vegetable broth and add diced tomatoes, thyme, basil, salt, and pepper.
  5. Bring the soup to a boil, then reduce heat and simmer for 20-30 minutes.
  6. Add leafy greens and cook until wilted.
  7. Serve hot, garnished with fresh herbs if desired.
