Description

Delicious and nutritious High Protein Pumpkin Muffins, perfect for breakfast or as a snack.


Ingredients

  • 1 cup pumpkin puree
  • 1 cup Greek yogurt
  • 1/2 cup gluten-free flour
  • 1/4 cup honey or maple syrup
  • 1/4 cup vanilla protein powder
  • 1 teaspoon baking powder
  • 1 teaspoon baking soda
  • 1 teaspoon cinnamon
  • 1/2 teaspoon nutmeg
  • 1/4 teaspoon salt
  • Optional: nuts or chocolate chips

Instructions

  1. Preheat your oven to 350°F (175°C) and line a muffin tin with paper liners.
  2. In a large bowl, mix the pumpkin puree, Greek yogurt, honey (or maple syrup), and vanilla protein powder until smooth.
  3. In another bowl, combine the gluten-free flour, baking powder, baking soda, cinnamon, nutmeg, and salt.
  4. Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
  5. Fold in any optional ingredients like nuts or chocolate chips.
  6. Fill each muffin cup about 3/4 full and bake for 18-20 minutes or until a toothpick comes out clean.
  7. Let them cool before serving.
