Description

Delightful, healthy muffins packed with protein and the cozy flavors of pumpkin and spices, perfect for breakfast or a snack.


Ingredients

  • 1 cup canned pumpkin
  • 1/2 cup protein powder
  • 1/4 cup honey or maple syrup
  • 1/2 cup almond flour
  • 1/2 cup oats
  • 1/4 cup almond milk
  • 1 teaspoon baking powder
  • 1 teaspoon baking soda
  • 1 teaspoon cinnamon
  • 1/2 teaspoon nutmeg
  • 1/4 teaspoon salt
  • 1/2 cup chopped nuts or chocolate chips (optional)

Instructions

  1. Preheat your oven to 350°F (175°C) and line a muffin tin with paper liners or spray with cooking spray.
  2. Mix together the pumpkin, protein powder, honey or maple syrup, almond flour, oats, almond milk, baking powder, baking soda, cinnamon, nutmeg, and salt until well combined.
  3. Fold in the chopped nuts or chocolate chips if desired.
  4. Spoon the batter into the prepared muffin tin, filling each cup about 3/4 full.
  5. Bake for 18-20 minutes or until a toothpick inserted in the center comes out clean.
  6. Let cool for a few minutes before transferring to a wire rack. Enjoy your healthy pumpkin muffins!
