Ingredients

- 2 cans white beans (cannellini or great northern)
- 1 onion, chopped
- 3 cloves garlic, minced
- 4 cups vegetable broth
- 2 carrots, diced
- 2 celery stalks, diced
- 1 teaspoon dried thyme
- 1 bay leaf
- Salt and pepper to taste
- Olive oil
- Fresh parsley for garnish
Instructions
- Heat olive oil in a large pot over medium heat. Add the chopped onion, diced carrots, and diced celery. Sauté until softened, about 5 minutes.
- Stir in the minced garlic and thyme, cooking until fragrant, about 1 minute.
- Add the white beans, vegetable broth, and bay leaf to the pot. Bring to a boil, then reduce the heat. Let it simmer for 20 minutes.
- Remove the bay leaf. Use a potato masher or immersion blender to partially mash the soup to your desired consistency.
- Season with salt and pepper to taste.
- Serve hot, garnished with fresh parsley.
