Description

A refreshing salad featuring thin ribbons of carrots and mixed fresh herbs, drizzled with olive oil and lemon juice.


Ingredients

  • 2 large carrots
  • 1 cup mixed fresh herbs (such as parsley, cilantro, and mint)
  • 2 tablespoons olive oil
  • 1 tablespoon lemon juice
  • Salt and pepper to taste

Instructions

  1. Using a vegetable peeler, shave the carrots into thin ribbons.
