Ingredients

- 2 large carrots
- 1 cup mixed fresh herbs (such as parsley, cilantro, and mint)
- 2 tablespoons olive oil
- 1 tablespoon lemon juice
- Salt and pepper to taste
Instructions
- Using a vegetable peeler, shave the carrots into thin ribbons.
- In a large bowl, combine the carrot ribbons and fresh herbs.
- Drizzle with olive oil and lemon juice, and season with salt and pepper.
- Toss gently to combine.
- Serve immediately or chill for 15-20 minutes before serving.
Notes
This salad is best eaten fresh but can be stored in an airtight container in the refrigerator for 1-2 days. Add nuts or seeds for extra crunch.
