- 6 large eggs
- 1 cup cottage cheese
- 1 cup shredded cheese (cheddar or your choice)
- 1 cup mixed vegetables (spinach, bell peppers, etc.)
- 1 cup almond flour or whole wheat flour
- 1 teaspoon baking powder
- Salt and pepper to taste
Instructions
- Preheat your oven to 350°F (175°C).
- In a large bowl, whisk together the eggs and cottage cheese until well combined.
- Stir in the shredded cheese and mixed vegetables.
- In a separate bowl, combine the almond flour and baking powder.
- Gradually mix the dry ingredients into the egg mixture until fully incorporated.
- Season with salt and pepper.
- Grease a muffin tin and pour the mixture evenly into each cup.
- Bake for 20-25 minutes or until golden and set.
- Let cool slightly before removing from the tin. Enjoy warm!
