Description

A quick and satisfying blend of taco flavors and pasta, packed with protein and nutrients.


Ingredients

Scale
  • 8 oz pasta (your choice)
  • 1 lb ground turkey or beef
  • 1 packet taco seasoning
  • 1 can black beans, rinsed and drained
  • 1 cup corn (frozen or canned)
  • 1 cup diced tomatoes
  • 1 cup shredded cheese (cheddar or Mexican blend)
  • 1 cup water
  • Salt and pepper to taste
  • Chopped green onions (for garnish)

Instructions

  1. Cook the ground turkey or beef over medium heat until browned. Drain excess fat if necessary.
  2. Add the taco seasoning, water, black beans, corn, and diced tomatoes to the pan, stirring to combine.
  3. Bring the mixture to a boil, then add the pasta. Stir well and reduce heat to a simmer.
  4. Cover and cook for about 10-12 minutes, or until pasta is tender, stirring occasionally.
  5. Remove from heat and stir in the shredded cheese until melted.
  6. Season with salt and pepper to taste.
  7. Garnish with chopped green onions before serving.
