Description

A delightful seasoning that captures the essence of summer, perfect for enhancing a variety of dishes.


Ingredients

Scale
  • 1 bunch Basil
  • 1 cup Flaky or Coarse Sea Salt
  • 67 oz Cherry Tomatoes (about 16)

Instructions

  1. Preheat your oven to 170°F or its lowest setting, and line a baking sheet with parchment paper.
  2. Rinse your tomatoes and basil. Pat the basil dry and remove the stems to keep only the leaves.
  3. Cut an ‘x’ in each tomato and add them to boiling water for about 30 seconds to 1 minute until the skins start to split.
  4. Remove the tomatoes and place them in an ice bath to cool. Peel off the skins and set them aside.
  5. Add your basil leaves and tomato skins to a food processor and pulse until evenly chopped.
  6. Add sea salt to the food processor and pulse again to achieve your desired texture.
  7. Spread the mixture in a thin, even layer on the baking sheet.
  8. Bake for about 30 minutes, stirring every 10 minutes.
  9. Remove from the oven once everything is dry and crispy, and let it cool completely.
  10. Add to an airtight container and store in the pantry for later use.
