Description

Cheesy, delicious stuffed zucchini bursting with flavor, perfect for a cozy family dinner or gathering.


Ingredients

Scale
  • 4 medium zucchinis
  • 1 cup cooked quinoa or rice
  • 1 cup marinara sauce
  • 1 cup diced tomatoes
  • 1 cup shredded mozzarella cheese
  • 1/2 cup chopped onion
  • 2 cloves garlic, minced
  • 1 teaspoon Italian seasoning
  • Salt and pepper to taste
  • Fresh basil for garnish

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. Cut the zucchinis in half lengthwise and scoop out some of the flesh to create boats.
  3. In a mixing bowl, combine cooked quinoa or rice, marinara sauce, diced tomatoes, half of the mozzarella cheese, chopped onion, minced garlic, Italian seasoning, salt, and pepper.
  4. Fill each zucchini boat with the mixture and place them in a baking dish.
  5. Top with the remaining mozzarella cheese.
  6. Bake for 25-30 minutes, or until the zucchinis are tender and the cheese is melted and bubbly.
  7. Garnish with fresh basil before serving.
